Cooking
We need these products.
Sweet pepper and carrots wash, peel and cut into strips. Garlic - plates. Pistachios are clear.
Meat wash, dry and sharp knife to make cuts, but not until the end.
The incisions should be laid with bell peppers, carrots, nuts and garlic.
Then the meat with salt and sprinkle with seasonings to taste. Now take the foil and wrap the meat. The seam should be at the top so that when cooked the liquid will not escape. Put into the form and put in preheated oven. At a temperature of 180 degrees bake for 1 hour 20 minutes ( at 200 degrees - 1 hour), then the foil to expand and hold in the oven for another 10 minutes.
Happened bright and appetizing, but the meat was a little dry. The reason, perhaps, that the recipe was recommended pork ham, and I have here a slightly different piece. So I decided to make a redo, and to cook the meat again, but with pre-marinating!
Made a marinade of yogurt, dried Basil, salt and black pepper. You can prepare the marinade according to your taste. Meat (1 kg ) left in the marinade for 6-8 hours, preferably overnight.
In the morning take out the meat and prepare for the filling, vegetables and nuts.
Using paper towels remove excess marinade and repeat all the steps: making incisions in the meat, fill with sliced vegetables, garlic and nuts. Sprinkle top with seasonings. Wrap the meat in foil and put into hot oven (180 degrees) for 1 hour 20 minutes in foil and 10 minutes at the open foil.
This time the meat was prepared perfectly! Turned out juicy and soft!
The option of marinating time is more expensive, but with great results!
