Kharcho from Roxana Babayan
Back in the 2000's this recipe I found on the page of a magazine. The recipe very much. If you strictly follow the recipe, it turns out an amazing dish - a real feast for the taste buds. I want to share it with You. Anyone interested - you are welcome to my table.

Ingredients

  • Water

    2 l

  • Beef

    500 g

  • Onion

    2 piece

  • Figure

    0.5 cup

  • Walnuts

    0.25 cup

  • Cilantro

    1 coup

  • Dill

    1 coup

  • Parsley

    1 coup

  • Khmeli-suneli

    1 tsp

  • Basil

    0.5 tsp

  • Salt

  • Garlic

    4 tooth

  • Peppers red hot chilli

    0.5 tsp

  • Tkemali

    2 Tbsp

  • Tomato paste

    2 Tbsp

  • Vegetable oil

    3 Tbsp

Cooking

Meat cut into small pieces

1 onion cut into cubes.

Sliced meat cover with cold water, bring to boil, remove the foam and add 1 onion whole, salt. Fire abated to a minimum and cook the soup for 1-1. 5 hours.

While cooking meat, prepare zazharku: warm up vegetable oil and fry onion until transparent and light Golden brown.

Add zazharku, zucchini, mushrooms, tomato paste, garlic, half of the chopped herbs, hops-suneli, Basil, red pepper. Stir and off the fire. Cover the pan with a lid and remove while in the side.

Rice (I used rice TM "Mistral" bubble mix (the blend of parboiled and wild rice)) rinse well and add to the broth. Mix. Cook for 10 min.

Add zazharku, stir.

Added walnuts.

Stir the soup, add the remaining greens. Stir and turn off the fire. Allow to stand for 5-10 minutes. the soup and call their home!
