I want to congratulate the lemon-curd cake with candied fruit and almonds. Cake difficult, but the birthday is not every day.. For the contest "Congratulate the Student with three years!"

Cooking
First bake the sponge cake. To do this, the eggs (4 PCs) we divide into whites and yolks. Whisk whites with a pinch of salt in a solid foam. Gradually add the sugar.
One by one add the egg yolks.
And sifted flour mixed with baking powder. Carefully stir.
Bake in a preheated 180 degrees oven until ready. Cools, cut the cake into three parts, wherein the upper layer is thinner than the bottom.
From the top of the cut letters. Crop and save.
With lemons remove the peel, the lemons cut into small pieces (seeds removed). Put the lemons in a saucepan, add 7 tablespoons of sugar and 1/4 Cup water. Bring to a boil and cook on low heat for 10 minutes.
Zest cut into thin strips, put in a saucepan, add 3 tablespoons sugar and 1 teaspoon of water. Set on fire and over high heat bring to a boil. Boil until they begin to change color. Remove and immediately spread on a plate, two forks separating into strips.

Cooled cream, and add to it 150 grams of butter (soft). Whisk.
For curd mass from the remaining eggs (2 PCs.) separate the whites from the yolks. Add 0.5 cups of sugar. Whisk.
Add cheese and butter (soft). Whisk.
Separately whisk the whites, add to the mass. Stir gently.
In mass add soaked in milk and heated gelatin. You soak it beforehand (I did this before baking the cake, just forgot to insert this step.)
Put the cake together. In split form, put the first Korzh. Impregnate it with lemon syrup (along with pieces). A couple of tablespoons of syrup left behind.
Lubricating cream (3 tablespoons of cream to delay).
In the pending cream added scraps of biscuit from the letters. Mix well.
From the mass sculpt balls in the center of which put almond.
Back to the cake. Put the second cake. We impregnate with syrup (without the pieces). Spread the balls.
Spread cottage cheese. Put in refrigerator to congeal.
While it's drying, heat in a water bath white chocolate.
Dip letters (upper side of the biscuit). Leave to congeal.
To the remaining chocolate, put the almond. Mix well.
With a frozen cake, remove the sides. Covered with protein cream.
Decorate. Lay out the letters. Sides decorate with candied fruit and almonds in chocolate. In the center I wrote the number 3.
