Sea bass with garlic confit and tarragon
Fish baked with garlic confit and flavored with salt.

Ingredients

  • Fish

    2 piece

  • Garlic

    6 tooth

  • Olive oil

    100 ml

  • Tarragon

    4 piece

  • Lemon peel

  • Salt

  • Black pepper

Heat olive oil for garlic confit (almost bring to boil).

Clean the garlic cloves from the husk, but not to the end (do teeth have to be in the skin). Drop into hot oil sprigs of tarragon and the peeled garlic, reduce the heat to low, and simmer on low heat for about 15-20 minutes (the garlic should be soft). Then, remove from heat, cover and simmer for 15 minutes.
