Vegetable caviar
My variation on the eternal theme "aubergine Caviar". There was a time I was just learning to cook and this recipe was invented out of ignorance of what is right eggplant bake and then grind in a blender or a meat grinder... But surprisingly the result exceeded all expectations, and since this variation of caviar always on my Desk!

Ingredients

  • Eggplant

    3 piece

  • Carrots

    3 piece

  • Onion

    2 piece

  • Tomato

    5 piece

  • Pepper

    2 piece

  • Peppers red hot chilli

  • Vegetable oil

  • Salt

  • Sugar

We grind our vegetables: carrots three on a coarse grater, eggplant, bell pepper into small cubes, onions and tomatoes - arbitrary, the pepper - into small pieces

The first thing Vitarium hot pepper. If not raw - you can safely replace the ground from a bag. This visarka gives a nice color to the oil and makes the taste not so spicy, more mild, spicy

Saute onions until translucent, then there add the carrot, also until soft. Set aside from heat.

Meanwhile, the "spread" tomatoes. I do fresh, but you can use salted, and canned. If tomatoes are too meaty, you can add a little water.

Combine the tomatoes, mix onion and carrot, add the remaining eggplant and bell pepper.

Cover the pan with a cover, low down the heat and simmer, stirring occasionally. Before final readiness add sugar to taste - 1-2 tbsp. Stir do not forget - few things can be worse in the kitchen than the smell of burnt vegetables)
