The Jerusalem artichoke or topinambour is a wonderful product in all respects. It contains a lot of vitamins, minerals, essential amino acids and very valuable substance-inulin (especially for diabetics). Inulin lowers blood sugar, removes toxins, stimulates digestive processes in the body, has a choleretic effect. Regular consumption of artichoke improves vision, enhances immunity.
