Description
Herring is a regular appetizer on the holiday table. I suggest to try an alternative, so beloved of the Russian soul, to the dish. Cook will not herring, not even the mackerel, and white fish. In our ocean and in stores red fish is not usual, but sometimes you want, so the fish I have in pink color. It turns out unusual and tasty, and the flow depends only on your imagination. Good fish and just like that, with pickled onion, on toast, or in salads.

Cooking
I had a pretty big fish weighing 1.2 kg (such as hake or cod). The fish are gutted, cut off head and tail part, washed well. Took the abdomen, incised on the back, removed the backbone (and most of the bones in principle, there is), removed the skin and cut into thin slices. It's easier to work with frozen fish. If there is a ready fillet, just cut into the fish.
Fish pour lemon juice. Ginger grate. To take favorite cucumber pickle, mix well all the ingredients "fish" (except for the fish, of course). Brine drain is not necessary, I take all that is in brine (pieces of garlic, leaves of green). Take the grated beets marinated the pieces for soup. Salt is not added, the fish comes salted.
The fish folded into a convenient bowl, pour the brine, put into the refrigerator. A day later the fish is ready to eat. Refrigerate the fish for 2 days, then store in the freezer, directly in brine, defrosting at room temperature before serving.
You can submit the fish just so, with pickled onions.
Or you can make mini sandwiches. For spreads, mix dry cottage cheese, grated smoked cheese, melkorublenoy herbs to taste, mayonnaise, spices. Soy sauce "Kikkoman" brings a touch of sauce.
