Meanwhile, make the sauce. Mix sweet chili sauce, minced garlic and ginger, juice of half a lemon, fish or soy sauce, sesame oil (I added only 1 tablespoon - for the smell, trout in new Zealand very fat).
Fillets or "steaks" trout jarocho lubricated with sauce on both sides and put in casserole dish.
Very finely julienne cut sweet pepper and sprinkle with trout. Preheat the oven to 200* and bake 20 minutes.
Before serving, sprinkle with chopped coriander. Fish is very tasty both hot and cold. BON APPETIT!
