Cooking
For meringue beat the egg whites to almost stiff, then gradually add the sugar, cocoa powder and cinnamon and beat until mixture is shiny.
Paint on parchment 4 circle with a diameter of 20 cm and put the squirrels inside the circles. Flatten the top. Bake for 1 hour, then turn off the oven and leave for 1 hour. Remove from oven, cool and remove from parchment. Meanwhile, make the cream. Whip the ricotta with the icing sugar, then add nuts, melted chocolate and mix well. Before serving, add the cream cream.
Assemble the cake before serve. Cakes sandwiching meringues with cream and cherries, put the cream and cherry on top.
