Cooking
To prepare the dough. Milk bring to a boil. In hot milk to dissolve the chocolate. And cool.
Proteins separated from the yolks. Beat egg yolks with sugar. In another bowl, beat egg whites until peaks, adding a pinch of salt. Into the yolk-sugar mixture pour in the butter, milk and enter the flour with cocoa powder. The dough should be the consistency of thin cream.
The dough carefully enter the beaten egg whites.
In a pan (I grease the pan with oil only for baking the first pancake) pour the batter. Pancakes fry on medium heat on both sides.
To make the sauce. Melt the butter with the sugar over low heat.
When the sugar has dissolved, pour the juice of 1 orange (I have a 75 ml) and 1 tablespoon peel. Then add 1 orange, peeled and cut into pieces. Cook sauce, stirring, until lightly thickened.
Pancakes serve with sauce.
