Description
This is something like a potato scone, cooked on a griddle. This wonderful recipe is from the book Dan Lepard, a wonderful Baker. This pie is good for brunch, dinner or just a snack.

Cooking
Boil the potatoes, mash it into a puree. Oil in advance to pull out of the refrigerator so that it softened.
In a bowl, mix the flour with soda and salt. Add the butter and mix it well with the flour by rubbing with your fingers until fine crumbs. Lumps should not be.
In another bowl mix well mashed potatoes, egg, milk and parsley. Mix well everything. Mix the potato mixture with flour. Should be very well mixed, sticky mass.
Preheat frying pan (medium size). Lubricate it with oil. To put weight on the pan, is well leveled with a spatula. The fire should be moderate. Importantly, the pie is not burnt and the flour is cooked. Ideally, cook 4-5 minutes under the lid. Then take a plate the size of a frying pan, brush with oil, cover the pan with a plate and quickly flip the pan. Then gently, prodding the Patty with a spatula, put it back in the pan and cook, covered, for another 4-5 minutes. The finished cake will be covered with a light brown crust.

Serve it as a whole. You can also sprinkle it with toasted bacon. Or cut into triangles and serve portions.
