Creamy coffee mousse with praline
A very delicate dessert for coffee lovers like me. Coffee with cream... what could be easier and tastier?

Ingredients

  • Brown sugar

    100 g

  • Walnuts

    100 g

  • Gelatin

    10 g

  • Powdered sugar

    150 g

  • Cream

    150 ml

  • Coffee natural

    75 ml

Walnuts pour boiling water and leave for half an hour. It will take away from them a bitter taste. Nuts and dry fry in a pan. Add to the nuts the cane sugar and greatly heat up until the sugar melts and the walnuts caramelized. Use for stirring a wooden spatula! Otherwise you and I risk to spend "free" time looking for pieces of plastic blades of pralines. Nutty mass transfer in a tray, the laid parchment. Allow to harden.

Frozen mass chop.

Gelatin soak in warm cream 20% fat. When it swells, heat the cream until dissolved gelatin. Make some strong coffee.

Cream 35%fat, whisk with powdered sugar. Mix cream, coffee, cream with gelatin. Add nuts. Mix well.

Suitable forms of cover with cling film. Put them in the ground and let it harden in the cold for several hours.
