Great berry pie! The combination of airy sponge cake, coconut and sour berries...

Ingredients

  • Red currants

    450 g

  • Chicken egg

    4 piece

  • Butter

    125 g

  • Sugar

    200 g

  • Vanilla sugar

    1 pack

  • Flour

    125 g

  • Starch

    50 g

  • Leavening agent

    1 tsp

  • Coconut shavings

    50 g

  • Powdered sugar

Cooking

Melted butter, 100 g sugar, vanilla sugar and a pinch of salt beat with a mixer

One at a time, whisking, add 2 eggs, then 2 more egg yolks. Flour, starch, baking powder and mix gradually, whisking, add to egg-oil mixture.

Pour the batter into the form, spread evenly on top of the red currants. Bake for 15 minutes at 200 degrees.

2 protein shake up in a foam, add 100 g of sugar (gradually) and continue to beat until it dissolves. Into the beaten egg whites add coconut and gently, but mix thoroughly.

Pie remove from oven, spread top evenly protein-coconut mixture, reduce the temperature to 150 deg. and put the pie for another 35 minutes. Pie remove from oven, cool, sprinkle with powdered sugar and garnish with berries of red currant. Bon appetit!!!
