Description
Appetizer of eggplant does not claim to originality, eggplant on the grill is a timeless classic. What's interesting is the fact that one and the same vegetable in hot and cold manages to unfold in completely different ways. Today I suggest the eggplant in the form of cold snacks.

Cooking
For cooking meals I took two medium eggplants. Slice the eggplant circles with a thickness of about 0.5 cm, put in a sieve and salt as it should. Then flip and salt again – do not be afraid to overdo. Let soak for 10 minutes, then thoroughly rinse the eggplant under cold water and Pat dry.
Now prepare the marinade. mix olive oil with chopped garlic and parsley, add salt to taste and black pepper, for seasoning vegetables and mushrooms grilled "Forester". Set aside the marinade, it will be useful to us later.
Lay sliced eggplant on a baking tray-grill "Forester" and fry on the grill on both sides until cooked.
Ready the eggplant, place in a bowl and pour the prepared marinade and mix well, allow the eggplant to cool and refrigerate for several hours to marinate.
Serve eggplant grilled with bruschetta or toast, in salad or just. I made an appetizer on slices of baguette. Baguette cut into slices, spread on a baking tray-grill "Forester", put on the coals and quickly fry the slices on both sides.
On each slice of baguette spread the circle of pickled eggplant. Bon appetit!
