I started to prepare this dessert the night before. Black currant pulled out of the freezer, added the juice and zest of half a lemon, 40g of sugar and 2 tablespoons of boiled water. All is well mixed. A bowl covered and put into the fridge overnight.
Morning juice to drain. Heat and dissolve 5 g of gelatin.
Currants to sort kremanku. On top pour the juice with gelatin. Put into the refrigerator.
Beat the yolks with 100g of sugar.
Milk boil, cool slightly. Pour in the beaten egg yolks, stirring thoroughly and quickly. Put on a small fire and cook, not allowing a strong boil, 3 minutes.
Dissolve in a small amount of boiled water 12g. gelatin. If you want to do in dessert bowls and molds, we suggest to take a little more gelatin for a creamy layer to the dessert better keep in shape. Cream vzbit in a lush foam.
In already cooled egg-milk mixture add the orange juice, gelatin and cream. All stir well.
Arrange the mousse in a bowl on top of black currant. Put in refrigerator for freezing.
To prepare the caramel with the hazelnuts and sprinkle on top of our dessert. For the caramel you need 100g of sugar and half a Cup of hazelnuts. Caramel make sure! Combined with a creamy mousse, it gives the dessert a pleasant taste. Decorate the top with berries of black and red currants.
