Vegetable stew with sauerkraut and dried fruit
Today I want to offer a hearty, but meatless stew. Very aromatic, tasty and of course useful.

Ingredients

  • Potatoes

  • Carrots

  • Onion

    1 piece

  • Celery root

  • Cabbage

    250 g

  • Apple

  • Prunes

    3 piece

  • Dried apricots

    3 piece

  • Vegetable oil

  • Garlic

    2 tooth

  • Cumin

    1 tsp

  • Salt

  • Black pepper

  • Bay leaf

    2 piece

  • Greens

In a pot with thick walls (I have an old baking dish) fry the diced carrots and celery.

Add some onion, also sliced into strips.

Potato peel, wash, cut into large chunks. Put to the vegetables. Fry together for 5 minutes.

Put sliced apples. I from the skin is not cleansed from the core. But if the skin is rough or You simply do not like, can be cleaned.

And dried apricots with prunes. I cut them into strips. Do not need to soak, just rinse.

To taste salt, pepper, add cumin and chopped garlic. Add a little sugar. All mix well.

Add hot boiled water. Easiest from the kettle. The water should be at the middle of the content. Cover with a lid and simmer all together, stirring, over low heat 35-40 minutes. 5 minutes prior to readiness add Bay leaf.
