Cooking
Pre-boil and cool the rice. I use flavorful white basmati rice from TM Mistral, it's delicious and will serve as the main ingredient in a salad. Measure 100 g
Wash and dry vegetables. Radish cut into thin strips. Similarly, slice the cucumber.
Pepper ( it is better to take pieces of mixed colors) cut into thin, short strips.
Tomato cut into thin slices. Onion cut into thin half-rings. If you use regular onions, pre-soak it in cold water, this will reduce the bitterness.
Pistachio pound in a mortar, lightly.
Add to the rice vegetables and nuts, mustard and dried herbs ( for my taste it is dried it is appropriate), add salt and mix gently.
Season with olive oil. Mix well.
Serve in the salad bowl or a La carte.
