Description
Very tasty, tender and flavorful cake "Napoleon". It is unusual in that the cream is added to fruit, in this case mango, which gives the characteristic sour taste and aroma of the cake. Baked on the anniversary of her son, recipe taken from "Eat at home" with my little changes. Thank you for the wonderful recipe!

Cooking
Cold butter RUB through a grater together with flour into crumbs,
Add sour cream and stir with a spoon
And hands knead the dough. Divide into 12 pieces and put into the refrigerator for 30 minutes.
At this time, prepare cream. Yolks and egg slightly beaten with sugar and starch (to avoid lumps),
Pour the flour and again whisk until smooth,
Add 200 ml of juice from the apricots and stir.
Put the saucepan on the fire and bring to boil
Pour in the mashed egg mixture and, stirring, cook on medium heat until the first bubbles and immediately remove from heat. Leave to cool slightly.
Chilled pieces of dough to roll out turns into a thin pellet, from a plate or stencil to cut the desired circles ( I have a 26 cm diameter)and bake in a preheated to 200 gr. the oven ( about 6-7 minutes) until slightly beige. Cropping to assemble and bake, then turn in crumbs to garnish.
By the way, not to forget each loaf with a fork or with a special roller to pierce in several places that when baking they are not swollen.
Here's a pile of cakes turned out...
In the cooled cream add the whipped cream with the icing sugar and gently stir.
Each Korzh liberally lubricated, hard, cream.
Thus collect the cake, coat the sides except the top. Sprinkle with crumbs from cakes. Since the cake was for a special occasion, I wanted to decorate it a little differently than a regular Napoleon. For this I made a glaze of white chocolate ( sugar water stir and put on fire to dissolve the sugar, added the chocolate, stirred in the end I put butter) and evenly poured over the surface of the cake. On top of the frosting caused the melted yellow chocolate stripes.
Sorry, I could not, for obvious reasons, to take a picture then cut or slice of cake.
But the next day I had to bake the same cake for, as they say, "home" use and then I got the picture in the cut, until it was dismantled in pieces. True, he was not decorated with chocolate, just sprinkled with crumbs... But nevertheless he, too, was very tasty!
