Cooking
Opara. Mix whole wheat flour, lukewarm water and yeast. Ideally you need 1 gram of yeast, but not all kitchen scales show a small weight. Therefore, the measure given in part L. the Consistency of the dough is obtained as a liquid cream. Tighten with cling film and leave in a warm place for 10-12 hours. (at night)
Flax seeds, pour 50 ml of water (warm), cover with foil and leave overnight.
The sourdough for the morning.
Mix three kinds of flour (sift), sourdough, salt, honey, yeast (3 g), flax seeds (water during the night to fully absorb) and water at room temperature. Knead the dough. All the ingredients I mixed with a mixer, and then kneaded the dough by hand on a work surface, sprinkle a small amount of flour. The dough will be quite thick, but not very tight.
Put the dough in a bowl, greased with vegetable oil, tighten with cling film and put to approach in a warm place for 60 minutes. ( I put it in the oven when the mode LIGHT)
Put the dough on a work surface lightly sprinkled with flour. Punch down, divide into two parts. Each roll out to a thickness of approximately 1 cm to Roll by the roll, each round carefully pressing down.
Formed the loaves out onto a baking tray lined with baking paper (grease the paper with vegetable oil). Make slanting cuts, cover with a linen towel and clean for proof for 40-45 minutes.

Cool loaves on wire rack. Get two loaf of 440-450 g each.
