Cooking
Beat eggs with 80 g of sugar.
Dissolve yeast in warm milk, pour in the eggs.
80 g of butter at room temperature cut into pieces, add to milk and eggs, whisk.
Pour small portions of flour and 2 tbsp finely grated orange zest, knead the dough. It will be a little sticky, it's not scary. Cover with cling film and put in 8-10 hours in the refrigerator.
In the morning, remove dough, it should rise about twice. Divided into two parts, place on floured work surface. From each part roll into sausages about 30 cm long, cut with a sharp knife into small pieces.
From each piece roll into balls, slightly flatten with your palm. Fold 3-4 tortillas together.
Grate the zest of one orange, add sugar. In a bowl, melt the butter. Gently take piles of tortillas and dip one side in melted butter then in the sugar with the zest.
Bake in tins for muffins or cupcakes in a preheated 180 degree oven for 20-25 minutes.
