Easter cake and butter serum
This recipe is the result of several years of practical search for the perfect dough for sweet buns. Of course, the main ingredient in this test is my favorite cottage cheese whey. The cake turns out very soft, delicious, sweet. The dough is easy to work with, knead it a pleasure (literally, I'm not disingenuous). I hope my cake will have your taste, my dear Powerade! Next, take the yeast. I prefer SAF-moment, they never failed me. Just take an ordinary, NOT cake, Not pizza, etc. - they better raise the dough.

Pour all the yeast in the serum, stir.

Add 2 cups sugar and 6 cups of flour, mix thoroughly. This will be our dough. Cover the container lid and put in a warm place to ferment for 5 hours. Not to interfere.

So that was the dough after 5 hours of fermentation.

Then still need to feed the yeast some sugar and let the dough rise a second time (the second rise). For this, we add to the dough 2 cups sugar, salt and 5 cups flour. Thoroughly mix with your hands. At this stage I used a mixer with a dough, as the dough was not very thick and the mixer cope with the load. Mix and leave to rise (to give a good climb) for about an hour.

Meanwhile, wash and dry the raisins.

So the second rise was carried out.

Now knead the dough completely. Add vegetable oil, melted butter, vanilla, beaten egg yolks, 4 cups sugar, sour cream, vodka, fill with raisins. All the time stir thoroughly.

Add the remaining flour - 14 cups. I just picked up a bag of flour 2 kg + added 4 cups extra. The dough is kneaded thoroughly. Not to say that it is necessary to knead for a long time. Due to the fact that the dough is mixed with the serum, it's very light and knead well.

I tried in the pictures to show how easily this dough, made on the serum. I wrapped it with my hand and it was unbent formation, were now divided from the pan, so it is elastic. Close the pastry lid and give it a go, have a good climb.

While the dough rises, you need to prepare forms for baking. I use here such for many years. A little tip: just in case, so the finished cake is not stuck to the bottom of the form, cut out circles of baking paper the diameter of the bottom and put in the form. Then lubricate with oil.

Spread it on the forms, rolling balls in accordance with the size of the form. Try not to fill out forms more than half. The resulting test I managed to fill 30 forms of different sizes.

Wait until the dough forms up. Don't let it rise too much, expect that in the oven the cakes will grow more. Something like this was in the forms.

And so it is necessary to raise. Bake gradually at 200 degrees. Unfortunately, photos of the finished cakes didn't, because I baked this number of cakes till half-past five in the morning and apparently missed this point from fatigue.

Finished cakes remove from the molds, allow to cool and glaze with pomadkoy. For swabs whisk 2 protein. To whites well whipped, add a small pinch of salt (only a little, and then brush out the salt). When the whites get whipped in the stable foam, gradually add the powdered sugar and vanilla sugar, whisk on.

Add lemon juice. Just put a little bit, a teaspoon or brush will crack when dry. I love the brush viscous, dense. It is when it dries, perfectly kept on the cake, does not crack or break.
