When I first arrived in French Brittany, I met a charming dish called "Galette". We are talking about ordinary pancakes from buckwheat flour, but be sure to serve them with stuffing and a Cup of cider. They come in a variety of salty and sweet, and like a real Russian lover of pancakes, I just love them:-) Stocks buckwheat flour, sometimes I do a little Breton dinners at home for my husband. Here it is buckwheat flour. As we in Russia, too, baked buckwheat pancakes, I think it's going to be possible. Maybe I'll have to look, but the one who searches, will always find:-).
Mix up two egg yolks with flour and hem a little water to the well were placed.
Will beat into a soft mousse two proteins separately with salt and pepper, add them to the batter along with the vegetable oil.
Stir and add water until until the dough has reached the desired baking pancake consistency.
Leave the dough for an hour to stand. Then bake the pancakes. If you have a good frying pan, grease it with oil do not have the crepes not to stick. Baked pancakes it is better to grease with butter, to avoid sticking to each other.
To prepare the "Galette" with the filling, I chose the recipe "Galette Complete" which is made with egg, cheese and ham. But the variations can be anything:). Melt a little butter in a frying pan over medium heat. Put the pancake in the middle, put a thin slice of ham, cheese (can be whole piece, and can be grated), and the top will break the egg. Doing this is not very convenient, as the egg will begin to spread and "escape". In order to prevent this, it is necessary to turn a pancake into an envelope with 4 sides, leaving a hole in the middle.
Recipe egg should remain in the middle, but I have left the cheese there:) that too is quite acceptable. Cover the pan and diminish gas. Wait until the egg is ready.
And voila!! Here he is handsome "Galette". Help yourself!!! French seeder just class:)
