Coconut ice cream

Ingredients

  • Coconut milk

    800 ml

  • Brown sugar

    0.66 cup

  • Yolk egg

    6 piece

  • Salt

    0.5 tsp

  • Vanilla essence

    1 tsp

In a small saucepan, combine 400 ml coconut milk and sugar. Bring to a boil, then lower the heat to medium low and, stirring occasionally, cook the caramel 20-30 minutes.

Beat the yolks.

In the ready caramel pour the remaining coconut milk. Heat without bringing to a boil.

To the yolks, stirring constantly, gently pour the hot coconut mixture.

Coconut milk with the yolks back into the saucepan. Add the vanilla essence. Bring to boil and stir, boil for 1-2 minutes.

Cool, you can pour it into moulds in a container and put in the freezer overnight or 4-6 hours.
