Once I promised to post a few Czech recipes today to keep my promise. Offer to your attention a wonderful cupcake recipe taken from the cookbook of the Czech author Vladimir Chaloupka dedicated to the traditional Czech pastry. Cupcake just extraordinary - light, weightless, slightly damp, just "negatine" unreal! Highly recommend to try. These cupcakes are baked in the vysočina region, situated at the junction of the historic lands of Bohemia and Moravia. If you imagine looks like the idyllic picture of the countryside with hills, meadows, ponds, forests and meandering rivers flowing through the picturesque valley, approximately so looks like highlands. This cake is very "rustic", but at the same time elegant and harmonious like the land where it originated.

Cooking
First you need to boil the potatoes, cool and grate on a fine grater, if you have no time to do, use the mashed potatoes (which I did). One whole egg and one yolk to pound with sugar, lemon juice and zest of half a lemon. Then add potatoes, flour, baking powder and vegetable oil.
Knead the dough, to which add the ground nuts.
You should get that kind of dough.
Whisk three whites to taut peaks and gently stir into the dough.
Cake pan to grease mast and lightly sprinkle with flour, if you have a silicone mold, the grease it is not necessary. The dough is placed into the form and bake at 180 degrees for 40-45 minutes. Readiness check wooden skewer. The finished cake remove from oven and allow to cool.
