Melt butter, add flour. And passeruem the flour in the oil.
Then add in passerovannoy flour warm milk, mix everything until the mixture becomes homogeneous. When the milk is completely thickened with the flour and butter add to the grated cheese.
When the cheese is completely dissolved, the resulting mass add salt, pepper, add nutmeg. Then add two yolks and stir these ingredients. In the cooking process, the mass for the souffle need to stir constantly.
Whisk chilled egg yolks with a pinch of salt until light foam.
Join the mass for the souffle with beaten egg whites (in three steps).
Prepare form for baking. Grease them with butter and sprinkle with breadcrumbs.
Put the resulting mass into molds and put in to bake for 20 minutes at a temperature of 200 degrees.
Ready souffle serve immediately on the table (because a soufflé has a feature to SAG after some time after cooking).
