Cooking
Mix two types of flour. Add 120 g sugar and a pinch of salt.
Butter (preferably from the freezer) cut cubes or grate on a coarse grater. Add the butter to the flour and RUB with your fingertips the butter into the flour.
The mixture is supposed to be "crumb".
Add one small egg (from the fridge). Quickly knead the dough. Cover with film and put in refrigerator for 1 hour.
Meanwhile, prepare the filling. Almond nuts slightly fry in a Teflon pan and chop.
5 egg yolks well eggs with 80 gr of sugar. Add the cream. I did not for 6 people, so you see 3 egg yolks!
Roll out the dough, place it in greased molds. Make holes at the bottom of the tartlets.
Amaretti cookies, crumble with fingers and sprinkle the bottom of the tartlets.
Apples, peel and cut into thin slices. Put them on the tartlets.
Almonds cut finely lengthways. On top of the apples sprinkle 20 gr of almond.
Fill all the egg mixture.
Put in a preheated oven for 20 minutes at temp. 180°C. Then lower the temperature to 160°C and leave to bake for another 15 minutes. Then allow to cool the tartlets, put in the fridge for 2 hours until the cream will not harden.
Get them out of the fridge, sprinkle the top with brown sugar and put in the oven to "Grill" them on the top shelf, for 2-3 minutes until the sugar starts to melt. Decorate top with remaining almonds.
