Cooking
For this dish we need: beef (veal) fillet. This is the ideal. And it's a real Czech Svíčková. But you can use other meat, get also very tasty. This time I took a pork loin. The meat should be cleaned of films, sea salt, ground black pepper and melted butter. Common variant "Svickova" is when the meat is still breast stuffed with bacon. To do this, the fat should be cut into cubes, the meat to make cuts along the grain.
Finely chop the onion, grate on a grater the rest of the vegetables, add lemon juice, spices.
To this mixture, wrap it up our meat, then put in the fridge for a day.
The next day, take out the meat and fry it in a pan until Golden brown, put. Then in the same pan fry the vegetables. After this, the meat and vegetables with the addition of water (or broth) simmer until cooked in the oven or on the stove. Ready take out the meat and put it in a container with a lid, so it gets cold. Use the remaining vegetables for the sauce. On the stove bring to a boil, add the mustard, flour, brown. Then add cream, sugar to taste. (If sauce get too thick, it can be thinned with milk). The sauce is ready Porirua blender (do not forget to remove the Bay leaf and peppercorns). You can additionally RUB through a sieve. Once having prepared the sauce, you will be able to decide according to your taste, what ratio of vegetables, spices and cream to your liking. Experiment!
On a large platter, pour the sauce (it should be a lot), lay out the slices of meat, sliced across the grain, dumplings, pour the meat with cranberry sauce and decorate with a cap of whipped cream. Can skip the dumplings (after all, not everyone loves them) and replace them, for example, potatoes. But cranberry sauce is an integral part of this dish, without which "Sirloin" not "Creamy"! Sweet and sour cranberry sauce goes perfectly with meat. And whipped cream complement the rich taste of the creamy vegetable sauce.
