Cooking
I cook beans with a regular pressure cooker without pre-soaking. For this Cup of beans (Kidney, TM "Mistral") to fill in the pan, pour three cups of boiling water, add tablespoon of vegetable oil, to avoid excess foam and clogging the valve of the pressure cooker. Do not add salt! Cook for about an hour.
Together with the liquid obtained about 600 grams of the finished product. For a salad to postpone 200 g, cool. The remaining beans can be frozen.
Onions cut into half rings. Part of large segments pour a small amount of boiling water, add slices of raw beet (for color), a spoonful of wine vinegar, a little sugar and salt. Marinate while preparing salad. The remaining onions chop and fry in small amount of oil.
Mackerel (will fit other smoked fish) to release from the skin and bones, cut into centimeter cubes. About the same grind boiled or baked beets.
Mix fried onions, beans, beets, mackerel. Season with salt, add to taste some sugar and a spoonful of wine vinegar. Season with olive oil. Pickled onions to dry out.
Salad let stand in refrigerator at least one hour. Serve portions garnished with the pickled onions. The taste is very harmonious, lightly smoked.
