Cooking
1. Sift the flour into a bowl and mix with sugar (recipe 50 g, and it turns out not very sweet, who likes sweeter, put 100 g) and salt.
2. Crumble the yeast, dissolve in warm milk for 10 minutes to leave.
3. Oil gently melt (it should not darken!)
4. With lemon to remove the zest on a fine grater.
5. The yeast with the milk, butter, zest and eggs to combine and mix with flour. Knead the dough. It is possible with a mixer, but you can with a spoon. The dough comes out sticky but not liquid, it holds its shape. Cover with a cloth and leave in a warm place for 1 hour.
6. The dough is increased 2.5 times.
7. It again knead, adding flour. Divide into 12-14 pieces and roll each sausage with a length of 20-30 cm and formed into pretzels, as in the photo.
8. Baking tray lay a baking paper, mix the egg yolks with 1 tbsp milk and brush it over the pretzels. Sprinkle with almond petals.
9. Bake in a preheated 200 degree oven for 20 minutes. I had included the convection, so the pretzel is baked for 5 minutes faster and was a bit darker than intended, but the taste is not affected. So with a convection need oven at 180 degrees. The finished pretzels sprinkled with powdered sugar.
10. On the fault shows that the pretzels turned out incredibly fluffy and airy. And citric aroma for a long time are echoing in the house.
