Lush sponge cake without baking powder
I used to cook a sponge cake using baking powder. And today I decided to do everything "as expected". And voila! The first time turned out fluffy and delicious cake!

Ingredients

  • Chicken egg

    8 piece

  • Sugar

    170 g

  • Flour

    170 g

  • Cocoa powder

    25 g

  • Butter

    40 g

The ingredients (I have less than that, because I was preparing a small biscuit). The butter should be melted in a water bath or in the microwave and leave to cool. Flour mixed with cocoa until smooth.

Beat eggs in a bowl, mix and put in a water bath. They should be warm, but overheating them is impossible!

...to obtain a white fluffy mass. While it will increase somewhere in 2 times. It will take about 10 minutes. The egg mass should keep good form.

If necessary, shift the weight into another bowl. There sift the flour with cocoa and mix gently with a spoon till all lumps. Then a thin stream pour the cooled butter and again a little to prevent it.

Pour the batter into the molds and bake in the oven at 180 C for 40 minutes.

The finished dough should regain its shape after pressing. That the dough does not opal, I don't get it directly from the oven to avoid sudden temperature changes. I'm a little cool the cake in the turned off oven with the door open.

The finished cake to cool, then cut into cakes. Cakes turn out porous and very delicate! (Though I have them turned out not very chocolate, a little cocoa added) Bon appetit!
