Lemon ice cream
Recipe from the chef of the restaurant "Fuente" Janek of Bellermann (hotel "ülemiste").

Ingredients

  • Yolk egg

    4 piece

  • Sugar

    100 g

  • Lemon juice

    2 piece

  • Rum

  • Cream

    250 g

  • Berry

  • Fruit

  • Greens

  • Powdered sugar

Whisk the egg yolks in parallel and heated in a water bath with sugar. Turned white, airy cream. It will add rum and then juice lemons. In another bowl, beat the cream into foam. Gently mix them with the eggs and put them in the freezer for 3 to 4 hours. Every hour the mass gently stir to avoid ice crystals.

Serve, garnish with berries, fruits and leaves of lemon balm or mint. Sprinkle top with powdered sugar.
