That is ONE OF the Italian chocolate cake with pears - Torta di Pere e Cioccolato! Variants of these many pies... pot pie pears are "hidden" in the chocolate dough and from it, their taste seems to be even more intense! I want to offer you the recipe for this pie, as it received the full endorsement of my relatives and relatives! And while pears are still in abundance, I propose to treat yourself and your family a delicious dessert... a Cup of evening tea or morning coffee!

Pears wash, peel, remove the core and cut into wedges (larger). Put pears in a saucepan, pour the wine and put on high heat. To keep pears on the heat until all the liquid does not evaporate. (instead of Muscat wine you can take and pink dessert wine).
Once all the wine has evaporated, carefully transfer the pears onto a plate and allow to cool. Pears are delicious already by themselves! )))
Chocolate (good quality!) break into pieces, put in a bowl and put in a water bath. Once the chocolate melts, add 100 g of butter pieces and how to mix. Set aside chocolate to cool.
Separate the yolks from the whites. In a large bowl put the egg yolks and whisk with the remaining butter (70 g) and half the sugar (50 g) to increase the weight by half.

In this recipe we will use the traditional Italian Amaretti cookies...
Cookies grind into crumbs. Upload the resulting crumbs in the batter and mix.
Then add parts of the sifted flour with baking powder. The dough will be quite thick initially - this is normal.
Separately, beat egg whites with remaining sugar until stable peaks.
Three times to enter whipped whites into the batter, each time stirring gently turning movements from the bottom up. In the end should be smooth lush chocolate.
Turn the oven to 180 C. Shape with a diameter 22-23 cm greased with butter and sprinkle with flour. Put into it half of the dough and flatten. Top in a circle to lay out the pear slices. They do not need much to push into the dough...
Then spread them remaining dough and flatten.
Bake pie in preheated oven for 50 minutes. In any case, should be guided by your oven, and the willingness of cake to check as always with a wooden skewer. The finished cake remove from oven and allow to cool 15-20 minutes in pan... Then place the mixture from the mold and cool completely on wire rack. Before serving, sprinkle top of cake with powdered sugar.
