Soft gingerbread
My family loves gingerbread, and I'm happy to try to prepare new test versions. This recipe is good because that time and food to cook out quite a bit, and the result is very fragrant, tasty and really soft gingerbread. Soon begins the"gingerbread season" I'm practicing))

Ingredients

  • Flour

  • Sugar

  • Honey

  • Powdered sugar

  • Egg white

  • Lemon juice

    1 tsp

  • Potato starch

    1 tsp

Mix the honey, sugar and egg and heat on a water bath to a warm state. I have brown sugar "Mistral", it gives the gingerbread a nice caramel flavor.

Warm the mixture add soda and stir. Soda is usually well damped with honey, but if you as a med not sure it is better to replace soda with baking powder (2 times the amount of soda).

Mix both kinds of flour, salt, spices. In the honey-egg mixture add the oil, stir and gradually add flour mixture.

The dough should be a little sticky. Wrap it in clingfilm and put into the fridge for a day.

Next, roll out the dough thickness of about 5 mm, cut out the gingerbread shapes and bake at 175 deg. I have baked 7 minutes, focus on your oven and try not to overdry. If gingerbread is still hardened, you can after they have cooled, put them in a plastic bag, add there chopped slices of Apple and tie. After a few hours the gingerbread is soft.

To prepare the icing mix the whites with the icing sugar and starch. The egg, previously well washed with soda and wipe dry, you can also soak it in soda solution for 30-40 min. If you make the powder yourself, it takes a few times to sift, or rather, sugar grains, which somehow manage to slip through a strainer, and spoil the whole picture))now, mix the powder with protein, add lemon juice and stir until a dense white mass. You can do it by hand or on low speed of mixer. Next, divide the icing into several parts, each add dye (I used gel) and each color add water literally one drop at a time to desired consistency. We need 2 texture:contour (thick)and for the fill. The icing is ready to fill when the trail held on the surface of the spoon disappears after 10 seconds.
