A piece of beef; remove the membranes, RUB with spices and salt and bind. A piece must take at least 1.5 kg and more is better... Link to cooked evenly. Tie strips of bacon.
The result mostly depends on quality of meat. Choose the perfect piece - and succeed. Fat softens the taste, but not necessarily. In front of the oven to sprinkle the piece with vegetable oil, so as not withered.
Put the beef in a very hot oven for 15 minutes. When the piece will appear Golden brown (it will not dry out the meat), lower the heat to 160-170 degrees and cook for another half hour. If the piece is bigger than 1.5 kg, add 15 min for each additional 500 grams. Then immediately remove from oven, slice with a sharp knife.
