step-0
To start, wash and dry berries. If You decide to use dried, then soak them for 8-10 minutes in warm water to swell.
step-1
To make the pasta Anko must take: 1 Cup red kidney beans, 100g of sugar (better to use brown cane). Boil beans according to instructions, drain.
step-2
RUB the beans through a sieve. In the puree you need to add the sugar and cook over low heat for ~15 minutes until, until the bean mass will acquire a dark brown color. If in the process of cooking the bean mass will be too thick, add a little broth after cooking the beans.
step-3
And in the end leave the pasta to cool. Anko pasta will be ready when you can roll it into balls.
step-4
Then divide the finished bean paste Anko into 6 equal portions and roll in balls.
step-5
Then pre-heat 150 ml of water in a bowl and dissolve sugar in it. After give a little to cool down the syrup, so that it is not hot.
step-6
The grinding in a coffee grinder rice, because we will need rice flour.
step-7
Then put in a separate bowl 200 grams of rice flour and while stirring, pour the resulting syrup.
step-8
Now put the rice dough in a microwave or conventional oven for 1-2 minutes. After you thoroughly mix the dough and put back in the oven until, until it will ascend and acquire a transparent color. When the dough inflates and becomes thick, remove from oven and stir with a wooden spoon or spatula. I cooked in the microwave.
step-9
Take a flat dish and sprinkle the bottom of a little potato or corn starch. Put the rice dough into the dish. Sprinkle with starch palms, to make it easier to work with the dough. Then divide the rice dough into 6 parts,
step-10
And make flat, round tortillas, sprinkling them with starch to tack and took the right shape.
step-11
Take Your chosen berries and one ball of Anko (bean paste). First press the berry to Anko ball, and then stretch the pasta around the berries.
step-12
Now place this ball in the middle of the round rice cakes. And on the same principle, rice stretch the dough around the filling, forming the finished balls to Daifuku.
step-13
Then carefully put all the balls in Daifuku on a tray or dish seam side down. To Japanese sweets looked particularly beautiful slightly colored juice of the berries and sprinkle the top with starch. Cover Japanese sweets to Daifuku a dry towel (this will prevent the candy from drying and formation of a crust) and let cool. Sweets will be to cool for approximately 2 hours.
step-14
The Japanese sweets are served Japanese green tea or white tea, and sweet wine. Bon appetit!
