Salad with eggplant and beets
Delicious vegetable salad with hints of lemon and sesame. Sesame oil may be added.

Ingredients

  • Eggplant

    2 piece

  • Carrots

    2 piece

  • Beets

    1 piece

  • Garlic

    1 tooth

  • Sesame oil

    0.5 tsp

  • Vegetable oil

    2 Tbsp

  • Chili

  • Paprika sweet

    0.5 tsp

  • Salt

  • Lemon peel

    0.5 tsp

  • Vinegar

    0.5 tsp

Cooking

Eggplant baked in foil at 180 degrees for 30 minutes or can be cooked. Cut into small cubes. Fresh carrot RUB on a grater. Or boiled :) Boiled beets cut into cubes. Cooking time depends on the size of beets. I bought already boiled. Or as you like. If you want the salad any ingredient acted in the title role, cut it larger than the rest. Me that beets tasted like.

And here's the spices that we need. If you use sesame oil, then add quite a bit, as it is very fragrant and can kill all the spices. Chili peppers are added as well to taste. I love more so after a meal to run around the apartment and look for a fire extinguisher.

Mix eggplant, carrots, beets, spices, add vinegar (balsamic or Apple), stir and allow to soak for 10 minutes. Then add vegetable and sesame oil. Very tasty with boiled potatoes. On top I sprinkled celery. As said Nikolay Baskov: "Well, I love flowers! Love it!". Almost as he will say to Annie: "Well, I love celery! Love it!" And after a light lunch I drank a glass of cranberry juice with Malinki. I hope somebody can use this recipe.
