I often substitute the sugar for dates in baking. Buy the cheap dates, they are very sweet and have a caramel taste. Be sure to mine and remove the bones.
Banana should be soft, ripe and sweet.
You will need 80 gr. freshly squeezed orange juice. One medium orange will suffice. It is better that the orange was sour, so the dough was the reaction with soda. If the orange is too sweet to add a teaspoon of lemon juice.
Dates, banana and juice place in a bowl and mash with a fork or hands. You can also use a blender, then texture will be uniform, I prefer small pieces in these muffins, and bake a cake from the same test - Porirua blender. Then add the butter and mix well. Coconut oil is certainly very fragrant, but if not, you can substitute another vegetable. I also did the walnut oil and just with sunflower refined, but then it needs a little less because it's liquid. Leave 2 tablespoons of coconut oil for the glaze.
Flour mixed with soda, sift and add to batter, stir well. You can add a pinch of vanilla, but very flavorful! You can use whole wheat flour or of the flour to replace the bran.
Put the dough into molds, filling about 2/3 full. Bake in preheated oven at 180-190°C for 30 minutes. The finished muffins should look a little ozolotilsya. You can also check the readiness with a wooden toothpick, it should come out dry. The output is exactly 12 pieces ;)
