Rolls of pork with apricots and pistachios

Ingredients

  • Pork

    2 piece

  • Olive oil

    2 Tbsp

  • Shallots

    2 piece

  • Garlic

    1 tooth

  • Coriander

  • Cinnamon

  • Ginger

  • Pistachios

    50 g

  • Parsley

    3 Tbsp

  • Apricot

    100 g

  • Butter

    1 Tbsp

  • Salt

  • Black pepper

Prepare first all the products we need.

Cut pork tenderloin lengthwise to open like a book.

Salt and pepper the meat. To postpone for a while.

Finely chop the onion. Heat half the olive oil in a frying pan.

Fry onion about 5 minutes, stirring constantly, until Golden brown.

Add in onions garlic, spices and pistachio, fry for another couple minutes on low heat.

Distribute onion mixture on the meat.

Spread on top of apricots.

To close the "book" of meat and tie with white thread. Do the same with the second piece of tenderloin. Heat the remaining olive oil and butter in a frying pan. Fry the rolls on all sides until Golden brown.

Add a couple tablespoons of water and saute the rolls for about 10 minutes under not fully closed lid. Then turn off the heat and let them stand for a bit, relax and think again...

Meanwhile, for the garnish put cooked until soft young spring vegetables and potatoes in the oven.
