Pancakes made of zucchini with ricotta
Recipe Badi. Never tried anything like it, very delicate pancakes from the great Italian pastry. Badi was preparing dinner at home, tried out the recipe and share with You :)

Ingredients

  • Zucchini

    2 piece

  • Ricotta

    180 g

  • Romano

    50 g

  • Parsley

    1 coup

  • Mint

  • Chicken egg

    2 piece

  • Flour

    4 Tbsp

  • Garlic

    2 tooth

  • Salt

  • Paprika sweet

And so it started. Here everything you need for cooking pancakes

First, put all and get the parsley and mint. Petrushka at once cut the "legs", they do not need. The finer the chop the better, and then throws in a bowl. There also will squeeze out the garlic. (Amazing flavor)

Start the zucchini, nothing special, just RUB on a coarse grater, throws in a colander and carefully squeeze all the water. Floating in a bowl of greens. Do not remove the float, you need more. Don't forget to rinse it ;)

Take the right amount of cheese and RUB on a small grater. Ricotta also dusted using a fine grater, you need to turn it into mush. Sent to the mixture of eggs, salt and paprika.

Mix thoroughly (I prefer by hand). Gently and little by little add flour, I needed 4 tbsp. of the Mixture should not be liquid. Consistency should get like a 20% sour cream :) Preferably of course.

Now take a pan, pour oil (olive better), a good warmed up and spread with a spoon pancakes into the pan. Roasted they have me on high heat.. do not procombat, and it will burn : (

But that's not all. Do not lay out the pancakes from the plate, first on a paper napkin, otherwise it will be a mess : (
