I wanted to bake pumpernickel. The site found a wonderful recipe from Susie (Lacoste), but for bread machine, which I have yet. And one more from Ira (биа4 b), but with pre-mixing, and I needed an oven urgently (but I promise to try and Erochkine version!). So I had to dig into the Internet and dig out the most suitable option for me. Now share with you, in case someone will have baking in the oven right now! Turned out very tasty bread with a rich taste. And slice with garlic or salmon oil, mincemeat or spicy soft cheese can not leave anyone indifferent!

Cooking
First of all mix the cocoa with 50 ml. of warm water and heated in a water bath.
Honey mixed with brown sugar and heated in a water bath to dissolve the sugar.
In a bowl mix both kinds of flour, salt, coffee (preferably use organic coffee very finely ground, almost a flour). Added dissolved in 80 ml water to the yeast and stir.
Do the deepening and pour in the cocoa, beer, vegetable oil and honey.
Knead the dough for at least 10 minutes. Is the key to good bread. I often have after the first 3 minutes were tempted to give it up (say, that would be fine). Then I remembered one of your favorite song and promised myself to continue to knead until you sing it 3 times :-D . What? And more fun to work on, and time passes faster. On the dough ball to spread in greased with vegetable oil capacity and roll until the dough is covered with oil. Leave to rise, covered with a towel.
Half an hour later the dough has significantly increased in volume. And the smell!!! There are no words! Then making the dough and knead for another five minutes. Remember at least two favorite songs :-) .
Forming round flat cakes, and spread on a baking sheet with parchment, greased and floured. The cake can be sprinkled with cumin. Cover with a towel or foil and leave for another 40 min.
Bake 40-45 minutes At 180 degrees. And here it is!
The bread turned out with a very rich flavor, crispy crust and a soft porous crumb. And don't worry about that amount of honey and sugar. The sweetness from them is not felt. Bon appetit!
