Cooking
Two cups of flour to brew one Cup of hot milk. To cool down a bit.
In 1/3 Cup of warm milk dissolve the yeast, add to the custard base, mix well and let rise in a warm place.
After rising knead the dough, add salt. Eggs separated, the yolks with sugar, add in the yeast mixture. Add melted butter, nuts and zest, if you use them, and whipped until soft peaks form proteins. Mix well.
To add to the dough three cups flour and knead uncool, soft dough. Let rise until doubled.
While our dough is rising, prepare the oil or fat for frying doughnuts. You can use refined and deodorized oil, but I decided to follow the recipe and fry the doughnuts in the melted goose fat. I have to say, I was pleasantly surprised. Fat is not chadit, does not smell and does not vihriala, the taste is completely neutral. Doughnuts turn out evenly roasted and is absolutely not greasy. So when the dough came to about half of desired volume, I put in a saucepan over low heat goose fat for rendering.
After the dough came, and the fat has melted and warmed up, begin to form the donuts. For this you need to grease the hands of vegetable oil, pinch off small piece of dough, stretch into a small flapjack and put the filling. I had cherry jam, which I threw in a colander to stack syrup.
The edges of the donut to close up and remove, flatten, giving it the shape of a ball. doughnuts do not make too big because they can't fry until the end.
In the book of hours is written that the donuts need to give up, "... but not too much, depends on the looseness of the donuts, because if will rise strongly, then the dough will lose its strength... and will become sakalar ". Sakalar us strongly not needed, so sculpt 10 - 12 doughnuts and start to fry since that stuff is made first. Thus all the donuts will rise slightly: the first - at a time when we sculpt later and the last when we fry already coming up donuts.
Drop the doughnuts in the fat or oil and fry for uniform boiling to a nice glow. Once finished frying the first batch, diminish the fire under the pot of fat, and sculpt and so on.. I got three batches of donuts, about thirty pieces.
The donuts I have uploaded to the sieve, which put on the right size pan to make the excess fat.
