Description
Shu is cakes choux pastry filled with cream, extremely tender and tasty. Typically used custard or butter cream, but I was filled with creamy cheese and covered with a glaze of white chocolate. And did not regret!

Cooking
Ingredients for making cakes.
Pour water into a saucepan, add butter, put on a strong fire.
While stirring, bring the mixture to a rapid boil, the butter has melted.
Pour all of the flour at a time, continuously stirring, reduce the heat to medium or minimum. Keep on heat for 1-2 minutes, the dough will form into a ball, easy autopause from the sides of the pan. Put the dough in a bowl for faster cooling.
Break 5 eggs into a separate bowl and mix well. Meanwhile turn the oven on 200 degrees until the dough is done, she warms up to you.
In the dough, cooled to 60-70 degrees, pour 3-4 tablespoons eggs (if you pour the eggs into the hot dough, they will curdle). Mix thoroughly with a spoon or a special attachment for the mixer.
Gradually add a few tablespoons of eggs, each time carefully vymeshivaem the dough until smooth. Eggs you can just hammer one into the dough, but I prefer to follow the consistency (very important!), that is adding them a tablespoon.
In choux pastry, the main thing - not to miss us to the desired consistency. You may need fewer than 5 eggs, for example, 4 half, 4, or even 3 eggs, and maybe have to put an extra half or whole egg. It all depends on your flour and the size of eggs.
The result should be that kind of dough drops from the spoon in heavy tape.
Using a pastry bag or just a tight package to squeeze out on a baking sheet, the laid parchment paper, a round pellet with a diameter of about 6-7 inches. Put in a preheated 200 degree oven for 20 minutes, then reduce temperature to 150 degrees, and after 10 minutes to 100 degrees. All baking will take 40-50 minutes.
While preparing the dough, make the cream. To do this, RUB the cheese through a sieve, in another bowl, pour the cream.
Whip the cream to soft peaks with a mixer on high speed, add the powdered sugar and vanilla sugar while still whisking.
Mix cream cheese, again whisking. To remove the cream in refrigerator for 20 minutes.
Remove from the oven cakes, the dough is very greatly increased in size, 4 times. Allow to cool, to make cuts in order to fill with cream.
