Lemon-strawberry mousse with Italian meringue
"Summer dawn". Gentle, bright and so summery! Now is the time when the body needs fruits and vitamins, so I decided to invent something useful, delicious and beautiful:)

Ingredients

  • Cheese

    450 g

  • Sugar

    1 cup

  • Milk

    1.5 cup

  • Vanilla

  • Lemon peel

    1 tsp

  • Lemon juice

    2 tsp

  • Gelatin

    25 g

  • Puree berry

    400 g

  • Egg white

    2 piece

  • Sugar

    125 g

  • Water

    70 ml

  • Lemon juice

    1 tsp

  • Salt

  • Lemon

    1 piece

  • Mint

Cooking

To start, pour the gelatin with water and leave to swell. To the cream cheese add the sugar and vanilla, stir.

Gradually pour in the milk and begin whisking immersion blender

Until smooth and creamy. Milk may need more or less, depending. what fat cheese.

Then add our Sunny lemon zest and juice ;)

And stir.

For the strawberry puree strawberries to grind with sugar (to taste)

Then put the gelatin on a steam bath and hold until dissolved.

Remove from heat and literally 3 tsp. add in strawberry puree. The rest of the gelatin in a thin stream injected into the cheese mass and mix.

Spread in layers in a bowl and put in the refrigerator. The layers are a bit spread out, but there is nothing to worry,

Because in the end they make this beautiful "rose".

Now for the meringue. Cook syrup from sugar, water and lemon juice and whisk the whites in parallel. Syrup boil to the point to drop (if you drop the syrup into cold water) did not spread, was transparent and hold the shape.

Cut the lemon (not the whole) in circles, then into quarters.

And throw the slices in the syrup, almost at the end of cooking.

Fill it with a pastry bag and spread a beautiful hill on top of our mousse.

Decorate with sweet slices of lemon and put in the fridge for the night ;)
