Beans in Russian with an Indian accent
This is my favorite dish of the beans, which is always prepared by my grandmother. I only made some minor changes to this recipe based on my modest knowledge of Ayurveda and Indian culinary art. The preparation is very simple, but the result is hearty, tasty, flavorful and very healthy dish!

So, it all starts with soaking the beans. Vsypte in an enamel bowl large Cup of beans, sort through it, removing the bits of husk and small stones if any. Cover with COLD water and leave to soak for eight hours or overnight. The water volume should be equal to about three volumes of beans. Soaking in hot water is not recommended for the simple reason that the beans may start to turn sour, and it will affect the taste and quality of prepared meals. P. S. the photo shows the already swollen and stayed a night beans. Its size increased approximately 2 times, as expected.

Drain the water, which soaked the beans, rinse it and place in a saucepan. Pour approximately one liter of hot water, bring to a boil, reduce heat, cover and cook for about an hour. IMPORTANT: 1. You need to cook in unsalted water. 2. To peel after cooking was softer, you can add water half a teaspoon of baking soda. 3. At the beginning of cooking it is desirable to add a Bay leaf, stuff five peas of black pepper and five cloves.

While cooking the beans, fry the onion in butter until Golden brown. You can also use vegetable oil, but butter is so much tastier!

To the browned onions add a little more oil and grated on a coarse grater carrots. Fry over medium heat for twenty minutes, stirring constantly. At the end of cooking, add a little soy sauce.

Now, mix the roasted carrots with boiled beans, add Your favorite spices, salt, pepper and serve. P. S. I highly recommend to add dried or fresh crushed garlic - it is the bomb! @= :-)
