Of course, this is only one of the famous Italian dessert. All summer kept the almond flour for some special cake. And now the hour has come! Very delicious cake, aromatic, sweet, a special kind of the texture of the dough. Try it!

Ingredients

  • Flour almond

    200 g

  • Powdered sugar

    120 g

  • Corn starch

    50 g

  • Sugar

    60 g

  • White chocolate

    180 g

  • Lemon peel

    1 piece

  • Chicken egg

    4 piece

  • Vegetable oil

    100 ml

  • Vanilla sugar

    1 pack

  • Leavening agent

    5 g

  • Cream

    70 ml

Let's start. Mix the almond flour with starch, baking powder and sifted icing sugar. I used vanilla icing sugar.

Chocolate RUB on a small grater. Float shoot with a lemon zest. Turn on the oven and set the temperature at 190 - 200 deg. C.

Beats eggs in a bowl, fill with sugar and vanilla sugar (I didn't use) and whisk until the sugar is dissolved and the weight increase threefold. 10 minutes. A thin stream pour in the vegetable oil, still whisking.

Pour in egg mixture, grated chocolate and lemon zest.

Three times, pour the almond mixture with a spatula or spoon gently fold beat in an upward motion. Take a split mold with a diameter of 20 cm, the sides greased with a thin layer of oil, cover the bottom with a circle of parchment. Pour the dough.

Close the form foil. Not just cover with foil, and tighten, holding tightly to the sides of the form.

Sent the form in a preheated to 190 - 200 deg. the oven for 5 minutes. Then, without removing from the oven, reduce the temperature to 160 deg. Minutes 35 - 40 bake a cake, the oven do not open! At the end of the allotted time open the oven and right through the foil to check the readiness of the cake with a wooden splinter. If it comes out dry cake is ready. Remove from the oven, remove the foil. Cooled the cake in the form for 15 minutes, take out.

Cook chocolate and cream for ganache.

Chop the chocolate into pieces, cream bring to a boil and add chocolate.

Mix thoroughly until the chocolate is melted and all smooth.

The cooled cake pour the ganache on top and decorate according to taste and imagination. My imagination was only enough gummy lemon peel. A very delicious cake. Almost a third of the cake my grandfather ate immediately, almost warm. Strongly suggest to get cold cake, cold great.
