Onion jam is absolutely a brilliant thing that you eat, even not fans of onions. It absolutely goes well with baked or grilled meat, pate. Onion jam is stored for a long time, another issue is that it ends quickly.

Cooking
Peel and cut onion into "Meridian", along. ( Cut along then, to the onion petals remained more juice.) First cut into quarters.
Now, each quarter cut into petals.
In a pan pour oil "IDEAL" mix of sunflower and olive oils.
Put in the pan chopped onion, add thyme and simmer, stirring frequently.
When the onions are reduced in volume, add sugar or honey, continue to mix. The sugar must get caramelized.
Pour into the pan with the red wine. And so, until evaporated, 200 ml., add a little salt, pepper optionally, you can drop a bit of Tabasco and a bit of balsamic vinegar.
In the process of boiling, I added chopped plums, all mix well. The result is chewy, spicy - sharp - sweet jam.
