I will allow myself this time to stretch the trip to Thailand for a few recipes! I want to start to introduce You to a simple and satisfying Thai dish - chicken with cashew nuts. At first I was very surprised that the Thais use in almost all food nuts, but after 2 weeks I could not imagine what can have otherwise! And yet one of the peculiarities of Thai food - spicy-sweet sauce. This time I was not able to find the original sauce and I was satisfied with a substitute, it's not as beautiful as the original, if you get a chance, find your home. Preparing this dish is very simple. The chicken breast should be cut into thin slices, season with salt and pepper and leave for a few minutes.
While the chicken is marinating, we chop the onion, garlic and a little Chile. Put into a hot frying pan a wok and fry a couple of minutes, until the onions change color to pale pink.
To the onions add the chicken and cook until the chicken becomes opaque. Here I must say that the wok I was just starting to develop and on that note - better to cook small batches of meat then it is cooked more evenly. So I was making small parts, shifting the finished chicken in a bowl.
Separately in a frying pan dry the cashew nuts. Return all the chicken to the wok, add the sauce, nuts and chives, chopped into 3 parts.
Close the lid and simmer for just 1-2 minutes, so the onions have wilted but not lost their juiciness.
That's all. The finished dish can be served with rice, noodles or eat on their own. It is very juicy, rich, sweet and moderately spicy.
