Profiteroles with egg cream
Another quick but quite bright and impressive dish for the holiday table. An interesting alternative to traditional canapés with caviar or deviled eggs.

Ingredients

  • Profiteroles

    14 piece

  • Shrimp

    100 g

  • Soy sauce

    1 Tbsp

  • Yolk egg

    4 piece

  • Mayonnaise

    1 Tbsp

  • Caviar

    2 Tbsp

  • Lemon juice

  • Dill

    1 piece

1. Boil and clean shrimp. I had a few shrimp with caviar, I also added. Shrimp finely chopped. Lightly sprinkle with lemon juice. Add soy sauce and stir.

2. Boil hard boiled eggs and remove the yolk. Proteins removed, we don't need them. Crumble the yolks, add mayonnaise and beat with a mixer until creamy. The cream should be thick, not spread, so the adjust amount of Mayo depending on the consistency of cream. It is better to add it gradually until you get the desired consistency.

3. From profiteroles to cut the lids and put inside of a half a teaspoon of chopped shrimp.

4. Using a pastry syringe or bag and shaped nozzles to isolate in the middle of the egg cream. Decorate with a small amount of red caviar and dill.
