Pasta with eggplant, tomatoes, peppers and cheese. A delicious and hearty dish, easy to prepare.

Ingredients

  • Pasta

    400 g

  • Onion

    2 piece

  • Eggplant

    400 g

  • Tomato

    300 g

  • Pepper

    3 piece

  • Garlic

    3 tooth

  • Vegetable oil

  • Greens

  • Salt

  • Black pepper

Cooking

Eggplant cut into strips. Onions chop and fry together with eggplant in butter.

Separately fry the diced pepper.

Scald the tomatoes with boiling water and peel. Cut into cubes, add to the pepper and fry for 2 minutes.

To combine vegetables, add the chopped garlic and chopped herbs, season with salt and pepper. Mix well.

Pasta boiled and drained, add the vegetables and simmer for 5 minutes.

The macaroni and put it on plates. Serve with grated cheese.
