Fruit cocktail in puff
Try to offer fruits and berries: spicy, slightly drunk, juicy and flavorful under a lid of puff pastry or on a bed of puff pastry! Which option do You prefer, pick and choose! But in any case, it's delicious!

Ingredients

  • The dough is flaky unleavened

    500 g

  • Brown sugar

    150 g

  • Berry

    300 g

  • Apple

    3 piece

  • Orange

    1 piece

  • Yolk egg

    1 piece

  • Powdered sugar

    1 tsp

  • Star anise

    2 piece

  • Cinnamon

  • Wine white semi-dry

    100 ml

  • Starch

    1 tsp

  • Butter

    50 g

  • Cream

    1 tsp

  • Jam

    2 Tbsp

I use seasonal berries (frozen): black currants, cherries, cranberries, blackberries. Apples and oranges fresh.

Apples peel, cut into cubes. Orange peel and filterout, cut into pieces. In the recipe using the flavorful brown sugar from the Mistral Demerara fine, generously sprinkle them with chopped fruit, add cinnamon to taste.

In a skillet heat the butter, put berries and fruits, good heat, add brown sugar to taste, cinnamon and star anise, bring to boil, simmer a few minutes over medium heat.

Pour the alcohol in the taste, add juice (I have cherry), starch, stir in this mixture, pour the berries, cook for 2-3 minutes, stirring, until the sauce thickens.

Spread the prepared berries and fruits along with the sauce over heat-proof cups (fill no more than 2/3), on top I sprinkled a little coconut. The puff pastry slightly to roll out, cut circles with a diameter slightly larger than the diameter of the cups. Shake up yolk with 1 teaspoon cream, spread it over the edges of the cups, cover the cups puff pastry, press down around the circumference of the Cup, brush the top with yolk and sprinkle with sugar. Bake in a preheated 200 C oven until Golden brown, (my cakes took about 10 minutes), immediately to the table.

The puff pastry slightly to roll out, cut circles with a diameter greater the diameter of the baking dish to the height of the walls, with one edge to cut out the leaf (which will handle). Put the dough in the form (I have silicone for cupcakes). Spread the bottom with jam, sides with the beaten egg yolk, fill with berry mixture. Bake in preheated oven to 180C until Golden brown for about 15-20 minutes (time depends on oven!).

To prepare Apple roses need Apple clean cored, cut into thin slices, boil for a couple minutes in sweetened to taste sweet water. To let the slices drain and cool. To form a rose and "planted" it in the basket, before brushing it with egg yolk and sprinkled with brown sugar.

A few baskets I baked without the filling, brushing only egg yolk and sprinkled with sugar. When baking they rose strongly immediately after baking I took a spoon, forming the space for filling. Filled them with berries to your taste, dusted with icing sugar.
